What's Opening Day without some of our great Five County Stadium ballpark fare?

The Mudcats want to make sure fans can celebrate Mudcats baseball anytime by enjoying some of their favorite ballpark concession items in the comfort of their own homes.

Food & Beverage Director Dwayne Lucas and Food & Beverage Coordinator Josh Clark have provided the following ballpark recipes for fans to cook up:

Catfish Po Boy
Hoagie Roll / Fried Catfish / Bacon Bits / Boom Boom Sauce

Drop Breaded Catfish into 350 degree oil fryer until cooked through (145 degrees) and coating is golden brown
Cook chopped bacon until cooked and lightly browned
Toast hoagie roll

Boom Boom Sauce:
Start with mayonnaise: Add mayo to a small mixing bowl.
Add flavor ingredients: Add sweet chili sauce, garlic, ketchup and sriracha to the mayo.
Stir: Stir all of the ingredients together until they're completely combined.

Place fried catfish into toasted hoagie, top with chopped bacon and boom boom sauce.

Brisket Loaded Tater Tots (new for the 2020 season)
Tater Tots / Beef Brisket / Beer Cheese

Follow your favorite beef brisket recipe or using a precooked beef brisket heat and serve (heated to manufacturers suggested internal temperature)

Bake tater tots until cooked
Warmed Beer Cheese
Load tater tots onto a plate or bowl, smother with beef brisket and beer cheese.

Piggy Back Mac
Carolina Style BBQ (Pulled Pork) / Macaroni and Cheese / Brown Sugar Baked Beans

Cook your favorite Carolina style BBQ
Cook your favorite macaroni and cheese
Cook your favorite brown sugar baked beans until warm
Load plate with Carolina Style BBQ, top with mac and cheese and baked beans.

*If you're feeling adventurous, combine on a toasted hamburger bun.

Carolina Style Hot Dog
Steamed Bright Leaf Red Hot Dog / Toasted Hot Dog Bun / Coleslaw / Bright Leaf Chili / Diced Onions / Mustard

Steam Bright Leaf Red Hot Dog until cooked (165 degrees).
Once cooked, place Bright Leaf Red Hot Dog into your toasted hot dog bun.
Top with Bright Leaf chili, diced onions, coleslaw and mustard.
